Random Favorites


What might you find if you ate breakfast at my house? 
Sometimes I make puff pancakes, or sausage and potatoes, but recently this has been on my menu. 


Egg whites, served over fresh spinach with feta, balsamic vinegar, pepper and salt. 
Served with coffee and a blueberry smoothie (no sugar). 

What? You don't like vinegar on eggs? What's wrong with you? ...
I could eat this three meals a day- or egg whites with fresh salsa. (My kids will eat this too- but not everything together on the same plate)

Poor kids. 
I keep them happy with McD's apple pie pockets once a week. (Shh..!)

On the culinary / nutrition topic...
This year I canned my own tuna! 

Several ladies I know got together last month and packed jars with fresh caught tuna. We all brought our pressure canners so we could get this done as soon as possible. No one wants fish canning to be an overnight process.. It starts to make you do silly things.

Canning tuna at home might seem odd to you too, but if you have never had fresh canned tuna, it is a totally different experience than the Chicken of the Sea. I am very glad to have this on my shelf for as long as it will last.

I know I have said this before; but, it is worth repeating:

Really loving these cozy arm warmers. *
They are inexpensive and make your summer tops work for winter. 

Added bonus: No muffin-top on the biceps. :D

  3. My fav breakfast; hashbrowns,one scrambled egg,bacon or sausage,toast with jelly and orange juice. Breakfast is my fav meal. I do love tuna, I'll bet fresh caught is awesome!

  4. The breakfast looked amazing! And do all your friends just have those canners just sitting around? I've never even seen one. And I for sure didn't know there was some great secrete Canning Society. I wonder what other clubs are out there I don't know about.

    1. haha. It's a not-so-secret society! Some of my friends have gardens and enjoy canning vegetables / meat / chili ... Actually, there probably is a club for it! 4H or Master Food Preservers or something like that.

      If you get out here, do it in September so you can pick up your filleted tuna straight off the docks. We'll send you home with a suitcase full!

    1. I have not tried home canned salmon yet- but I bet that is amazing. I put some smoke flavoring in a few jars of the tuna and it was really good. I think I would try that with salmon too!

  9. Hey you!! First of all, your breakfast looks HEAVENLY. I love balsamic vinegar. I could drink it:) Spinach and egg whites are flying out of this house right now too!!

    I can imagine that fresh caught tuna canned is amazing. I LOVE tuna. Love it on salad or just with a fork!

    You look beautiful! Laughing at the laugh lines because in the picture I just posted of myself, the first thing I noticed was laugh lines. Funny, how I never would have noticed them on you in this picture! All I see is your smile.

  10. Wow, I've never canned anything in my life and sure wouldn't even know that you could can tuna yourself...I mean I guess why not, I've just never heard of anyone doing it before. That's pretty cool. I wish I like eggs...I try and try, and keep buying them and telling myself to eat them and enjoy them, but I just hate them...really hate them.

  12. I have those arm warmers and I'm with you - they rock.

    I can with my sisters in law every year, but you've got us beat! We only use up to four canners at a time. I've never done meat, but my girlfriend does it all the time and I may give it a go next year.

    Fall is such a beautiful time to be outdoors! Especially when the weather cooperates!

    1. You need to try canning meat. It's almost easier than fruit because you don't have to worry as much about the jars- you can pack them cold and the jars need to be clean, but will self sterilize due to the heat/time cooking. I used frozen chicken breasts the first time and just followed the book! Just don't do beans unless you pre-soak them :D ..

      Somehow I think you might have a few pairs of the arm warmers! haha

    I use to love those McDonald's apple pies when I was a kid. Yum!
    Fresh canned tuna sounds fantastic compared to the processed stuff. Cool idea to all can together and make a party out of it.
    I love fall running too. Crisp air, leaves changing.
    We are all getting facial lines. We can choose happy lines or grumpy lines. You've chosen the right ones :-)

  14. My parents used to can a lot when I was a kid, but the whole process was so miserable that I swore I'd never do it. However... if you turned it into a social event.... hmmm
    I love arm warmers! I have 3 pairs from light to heavy so that I can continue to run in my singlets all year long!

  16. In answer to your question: My 10km would definitely be for fun only. In fact, there is a church on the route that opens its doors so runners can go in and say thank you during the race. I plan on doing that for sure! I ran my best 10km in 1997 - 47:13.

    I love fall running too. It's been just amazing here, maybe the prettiest fall I can remember since moving to CO in 2002. Being a runner is the best way to enjoy it.

    1. You will have to try it sometime. You would love the time it saves in the long run.. to just have chicken or beef, etc.. ready to make enchiladas or stews. Very handy!

    I'm not a fish eater...unless it's deep fried catfish, which is just so healthy for you :). I'm always impressed with your ability to be so resourceful. Reminds me a lot when I was a kid as my mother did all those things you do (canning, jellies, etc).

    1. Good to hear from you, Jill!! We could sit down and eat some fish and chips- a good old fish fry would be OK with me! I love that stuff and it's a good think I don't have a deep fryer.
